Jerked Braised Goat

Jabberwocky Jerk Braised Goat Serves 6 3 pounds boneless cubed goat meat 1/2 pound cooked, crumbled bacon 8 Oz. Jabberwocky Sweet Jerk 2 Tbls. Olive oil Garnish: lime wedges and fresh cilantro Preheat oven to 250 degrees. Marinate goat meat in 4 Ozs. Jabberwocky Jerk sauce for up to 4 hours in refrigerator. Remove and allow to come to room temperature. In a heavy-bottomed sauté pan, heat 2 Tbls. Olive oil over medium high heat. Sear goat meat in small batches until well-browned on all sides. Mix your crumbled bacon. Add remaining jerk sauce to your marinade and bring to a simmer, cover pan, and braise in the oven for about three hours, or until goat is tender. Garnish with lime wedges and chopped fresh cilantro. Enjoy!

Carrot Crusts


80 oz ground carrots
24 oz shredded cheese
12 eggs
10 oz Dried cranberries
16 tbsp coconut powder
8 tbsp coconut sugar
8 tbsp turmeric
2 tbsp garlic
8 tbsp French thyme
8 tbsp Ginger

In batches add shredded carrots to your food processor and pulse until carrots are the size of rice grains.
Combine all of your ingredients in large bowl. Place parchment paper on your baking sheet and take a handful of your batter and shape into your crust. You can make individual size crusts or what ever size you desire.
Bake at 425 degrees for approximately 20 minutes. Allow to cool. Wrap individual crusts in Saran Wrap and freeze. For a quick meal, pull out of freezer and add whatever topping you desire. Bake at 425 for 20 minutes. This recipe will make approximately 19 individual crusts. Enjoy!

Jerked Honeyed Braised Beef Short Ribs

4 1/2 pounds beef Short Ribs 8 oz. Jabberwocky Smooth Jerk 6 oz. Honey 2 cups Beef Stock Vegetables of your choice (optional) PREPARATION Place in even layer in slow cooker. Add all ingredients, except vegetables.cover, and cook on low heat until meat is tender, about 5 hours. Add vegetables, cook another 3 hours. Using slotted spoon, transfer ribs to serving bowl. Spoon fat off top of sauce and pour sauce over ribs.

Orange Melted Leeks

Orange Melted Leeks 4 leeks, split in half, washed well. Sliced 3 large Shallots sliced thin salt & freshly ground black pepper 2 tablespoons Blood Orange olive oil 1 tablespoon butter Zest of orange 3 tablespoons water Directions: Heat Olive Oil in sauté pan on low heat. Add butter and swirl pan to blend. Add shallots and cook until translucent. Add leeks and stir in oil and butter. Add 1 tablespoon of water and cover pan. Cook for 20 minutes, checking to make sure it doesn't get to dry. If needed add another tablespoon of water. Add orange zest and salt and pepper. Cook another 5-10 minutes and serve. Enjoy!

Jerked Pulled Pork (crockpot method)

Jerked Pulled Pork 1 (6 pound) pork shoulder roast 1 jar Jabberwocky Smooth Jerk sauce 12 large bread rolls, sliced in half Directions Place the pork roast into the slow cooker fat side down, pour in the jerk sauce. Cover and cook on High until the roast shreds easily with a fork, 5 to 6 hours. Remove the roast from the slow cooker, and shred the meat using two forks. Return the shredded pork to the slow cooker, and stir the meat into the juices. Scoop onto roll Mango salsa (optional) Serve on rolls!

Foo Foo

If you love plantains, you will love this dish! 8 Ripe Plantains. 1/2 stick of Butter. 3-4 Teabags or loose tea. (optional) Salt and Pepper to taste. Peel and Slice plantains, cover with water add tea either in bags or tied in cheesecloth. choose a tea that you love the flavor of. It will infuse into the plantains, Rooibos will give a nice smoky flavor excellent with BBQ or Jamaican dishes! Any tea you love will work. Drain, mash, add half of the butter, salt, and pepper. Allow to cool. On a large sheet of Plastic wrap. Roll mashed plantains into approximately 2 inch cylinder shape and refrigerate. When chilled cut into 1/4-1/2 inch discs. Heat frying pan with butter, add the discs and brown on both sides! Salt and Pepper! You can prepare the cylinder a day or two ahead. I will tell you if I am boiling anything I will add a tea ball to the water. It's great with potatoes, rice, Quinoa. Many (teas) are not actually tea at all, but are herbs. If you start using some of these teas you will open your world of flavors! Depending what you're serving, you can have a sweeter tea, savory, or smoky.I have noticed if I'm making mashed potatoes, the russet potatoes absorb more of the flavor. Serves 4 Enjoy! Plantains can help lower blood pressure, prevent and treat ulcers,prevent constipation, decrease the risk of heart disease!

Bacon Salsa! Hussar!

Bacon Salsa! 2 1/2 pounds Bacon ends and pieces 1 Pineapple 2 white onions 1/2 cup finely chopped Pineapple Sage 1/2 Meyer lemon juiced 1/4 cup passion fruit juice 1 teaspoon Spanish Smokey Paprika 2 tablespoons Coconut Sugar Salt and Pepper Spread bacon on cookie sheet bake at 350 degrees for approximately 40 minutes turning bacon every 15 minutes. Dice other ingredients. Set aside. When bacon is cooked allow to cool. Using paper towels, absorb excess fat. Do this until bacon looks dry. Add to rest of ingredients. Squeeze lemon juice into salsa.

Cauliflower Crust Pizza

Cauliflower Crust Recipe 1 recipe of Cauli-Rice (recipe below) 1 egg 1/3 cup shredded mozzarella 1 TBS. Seasoning of your choice 1/4 tsp. salt 1/8 tsp. fresh ground pepper Toppings of your choice, tomato, pesto or Alfredo sauce, cheese, precooked meats* & precooked veggies* Preheat oven to 450F. Line a baking sheet with parchment paper. It is important to get the rice as dry as possible so that there won’t be extra moisture in the crust which will prevent it from crisping up properly. In a medium bowl combine the dry Cauli-Rice, egg, 1/3 cup shredded mozzarella, seasoning, salt & pepper and mix to combine well. Press the cauliflower mixture into an even thickness on the prepared pan, either into a round or rectangular shaped pizza. I kept the crust pretty thin, about 1/4-inch thick. Bake for 15-20 minutes until the crust is firm and golden brown. Remove the pan from the oven and turn off the oven and turn on the broiler and move the rack to up close to the broiler. Top the cooked crust with sauce, cheese and toppings of your choice. Place under the broiler until the cheese is bubbly and melted. The toppings I Used on this pizza was Jerked Chicken (marinated in Jabberwocky Smooth Jerk) Equal parts Sweet Molasses Papasauce, and Jabberwocky Smooth Jerk. Caramelized onions. 1 Avocado Grated Cheddar Cheese and Mozzarella Cheese Salt and Pepper on the Avocado Cauliflower-Rice Jabberwocky Smooth Jerk Step 1, 1 head fresh Cauliflower Remove the leaves and hard center core of the cauliflower. Cut into florets. Wash and then allow the cauliflower to dry completely. (You want the cauliflower completely dry and you will NOT be adding any water when cooking, this helps to cut down on the boiled cauliflower taste and smell.) Once dry, fill the bowl of a food processor about half full and using the chopping blade and the pulse action, process the cauliflower until it looks like the size of grains of rice.Spread Cauliflower onto baking sheet and turn oven to 150 and allow to dehydrate for 1 1/2-2 hours. Fluff up the Cauli-Rice with a fork and if desired add a pat of butter, salt & pepper. You can use just like this or create a pizza crust from it!

Sweet and Spicy Bacon

Sweet and Spicy Bacon Ingredients, 2 tablespoons coconut sugar 1 teaspoon cayenne pepper 1 teaspoon black pepper 12 pieces – thick sliced bacon Preheat oven to 375 degrees. Into a small bowl mix: sugar, cayenne pepper, and black pepper. Set aside. Arrange bacon sliced onto baking sheet making sure slices do not overlap. Bake for approximately 7 minutes. Turn bacon slices over and sprinkle sugar/pepper mixture onto slices. Return to oven and bake for an additional 12 minutes. Transfer bacon slices to a cooling rack and allow to cool completely.

Honey Jerked Ham

8 pound fully cooked Ham 1/3 cup honey 2/3 cup Jabeerwocky Smooth Jerk Preheat oven 350. Slice 1/2 inch slits diagonally on top of Ham. Mix honey and Jabberwocky Smooth Jerk sauce together. Pour over ham in roasting pan. Cover. Bake for 1 hour 45 minutes. Remove lid, baste, occasionally.bring oven Temperature up to 400, for another  20 minutes!

Jerk Chicken

Jerk Chicken! This Is a classic jerked dish. Marinate chicken for at least 4 hours with enough Jabberwocky Smooth Jerk to cover chicken. You can marinate overnight in the refrigerator. Grill chicken. Heat extra sauce to boiling. Pour over the grilled chicken.  (When using sauce after marinating always bring to boil before using it over meat to make sure any bad bacteria from meat has been removed.) Enjoy!

Jerked Thanksgiving Turkey!

Almost that time! If the pilgrims had this recipe, it would have been the tradition! Jabberwocky Smooth Jerk 1 Fresh Turkey 2 16 oz. Jars Jabberwocky Smooth Jerk Plantains 1/2 pound Prosciutto 12 green onions cleaned, trimmed slightly 1/2 pound crushed pistachios Cooking twine Have your butcher debone turkey for you. Save the bones to make stock. This can be done the day before. Marinate turkey in 1 jar of Jabberwocky Smooth Jerk sauce, at least 4 hours. Preheat oven to 450. Lay open turkey so your looking at inside of bird. Lay out prosciutto,then place mashed plantains, pistachios. Turn half of your green onions opposite direction so that you'll see green ends throughout the rolled turkey. Roll your turkey into a roast shape and tie off. Pour marinade over the bird, cover, Roast turkey on rack, rotating pan 180 degrees halfway through roasting, until an instant-read thermometer inserted into the turkey registers 170° let turkey rest abou 15-20 minutes. For the gravy take some of your stock and add the other jar Jabberwocky Smooth Jerk allow to heat through. For the Plantains, Peel & slice blackened plantains, cover with water. Boil until cooked. Drain, mash, add butter, salt, and pepper.this can be done a couple days ahead. Since most of the work happens ahead your not working that hard the day of your dinner. The clean up is very easy! This can be altered to whole chickens also! Jabberwocky Smooth Jerk Happy Thanksgiving! It's almost time to start thinking about thanksgiving dinner! I can tell you this year I will be wrapping turkey in a basket weave of Bacon! That's right, Our beloved BACON! Which also means I will leave out prosciutto. Instead of adding stock to the finishing sauce, I will heat sauce with balsamic glaze. Then I   Happy piggy turkey day!  Trust me if the pilgrims had this available to them, this would have been the tradition!

World's Best Deviled Eggs

Worlds Best Deviled Eggs


Dozen Eggs
7 tablespoons Mayonnaise ( I make the Paleo Mayonnaise, recipe below)
Green Apple 
3 slices bacon
Caviar
Salt and pepper

Mustard Vinegarette
2 Shallots
4 tablespoons Dijon Mustard
2 tablespoons Red Wine Vinegar
8 tablespoons Olive Oil

Hard boil the eggs. Allow to cool. Peel
Cut bacon into bits and fry in pan.
Finely mince a couple of slices green apple
Peel and mince shallots very fine.add to red wine vinegar and macerate. Let stand for 10 minutes. Add mustard, salt, and pepper. Whisk in olive oil. Use a high quality olive oil. Put into squeeze bottle, cut large opening.

Cut eggs in half, remove yolks. Mash the egg yolks with the back of a fork, add mayonnaise. Blend in the crumbled bacon and green apple. Using a spoon or a pastry bag with tip fill egg whites.squeeze mustard vinegarette over the eggs. With the tip of a spoon, add a small bit of caviar to the top. Yum!

Tips for easy peeling. Use older eggs. They are more alkaline than fresh eggs, which makes them easier to peel. Make a small crack in the egg and submerge in ice water.the water will seep between the membrane and the shell.

Paleo mayonnaise (yields about 1 and 1/4 cups)
2 egg yolks
1 tsp mustard (this is optional)
3 tsp lemon juice
1/2 cup olive oil
1/2 cup coconut oil

Technique
Put the yolks in a bowl (blender, food processor) with the mustard, if using and 1 tsp lemon juice and mix those ingredients together;
Start whisking vigorously (blender or food processor on low) while dripping the oil very slowly, even drop by drop in the beginning. You’re creating an emulsion and if you put too much oil at once, it will separate and will be very hard to save. Whisk non-stop and use a towel under the bowl to help stabilize it;
As you add more oil, the emulsion will form and the mayonnaise will start to thicken and you can pour the oil faster at this point;
When all the oil is incorporated and the mayonnaise is thick, add the rest of the lemon juice and taste your creation. You can season to taste with salt and pepper;
Enjoy without guilt and put the store in the refrigerator!
And here you go, it’s that simple. Of course I encourage you to play with it and to come up with new variations. Happy Paleo mayonnaise making!

Jerked Frittata


Ingredients

5 slices bacon
12 eggs
6 egg whites
1/4 cup Jabberwocky Smooth Jerk
1 1/2  tablespoons Olive oil
1 teaspoon salt
1/2 teaspoon ground black pepper
3/4 cup chopped purple onion
1 cup shredded cheddar cheese
1 cup chopped artichoke hearts
1 pint cherry tomatoes
1 avocado sliced

Directions

Preheat oven to 350 degrees F (175 degrees C).
Slice cherry tomatoes in half add Jabberwocky Smooth Jerk in a bowl
Add olive oil to large oven safe skillet. When hot add onions. When onions have become translucent,  place bacon in skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Add red pepper and artichoke hearts to skillet.
Beat eggs and add the egg whites, salt, and ground pepper in a bowl; pour into skillet. 
Bake in preheated oven until a knife inserted near the center comes out clean, 25 to 30 minutes. When finished, loosen frittata from skillet, turn over onto platter. Sprinkle Cheddar cheese on top while hot. Add cherry tomatoes and avocado to the top.

Jabberwocky Smooth Jerk Sauce Combinations

Jabberwocky Smooth Jerk Sauce Combinations!

A note about our Jerk  combination sauce recipes. You will want to marinate your foods in straight Jabberwocky Smooth Jerk sauce. This will penetrate into your meats much better. Use the jerk combination recipes as finishing sauces. You may use the left over marinade as finishing sauce by itself or in combination sauces as long as you bring sauce to boil.

Jerk Mole Sauce

1/2 cup Jabberwocky Smooth Jerk
1/4 cup Quality Olive Oil
1/3 bar Mexican chocolate, grated
1/4 teaspoon Cumin Powder
1 tablespoon Peanut Butter (unsalted)
3 tablespoons Chopped Sundried Tomatoes

Add jerk sauce, olive oil, cumin powder, and sundried tomatoes, to sauce pan. Heat to low boil, add peanut butter and chocolate! Continue to heat and 
serve with a rotisserie chicken or your own cooked chicken to give it an entirely different flavor. Rice and/or tortillas plus salad greens, sliced avocado, and chopped tomatoes create a quick and deliscious meal, worthy of a celebration!

Jabberwocky Honey Glazed Sauce

1/3 cup honey
2/3 cup Jabeerwocky Smooth Jerk

Pour honey and Jabberwocky Smooth Jerk sauce together in sauce pan and heat thoroughly until blended.
Serve on ham, bacon wrapped Shrimp, also fabulous. On our  jerked Stuffed Mushrooms! If you need a more subtle jerk flavor, this works well on all of our recipes!

Jabberwocky BBQ Sauce

1  1/2 cup Jabberwocky Smooth Jerk
1/2 cup favorite BBQ sauce

The best spare ribs ever!
Marinate ribs 4-6 hours in 1 cup Jabberwocky Smooth Jerk
Blacken on grill
Bake at 350 1 hour
Blend Jerk and BBQ sauce use for dipping !

Jabberwocky Red Wine Reduction

1/2 cup red wine
1/2 cup Jabberwocky Smooth Jerk

In a saute pan, over medium high heat, add the red wine and the stock and reduce by a third. Deliscious  over  Filet Mignon, sliced, then crumble a little Feta or Bleu Cheese  over the top. Any cut of beef, this finishing sauce is beautiful!

Jabberwocky Jerked Meatballs

These are great as a the main entree or as an appetizer.
I myself am allergic to gluten and corn by products, truthfully these ingredients aren't healthy for anyone, food tastes so much cleaner without them! Give it a try! After about a week of removing these from your diet, you'll notice you taste Flavors much more intensely.

Jerked Meatballs

1 lb Ground Beef or Pork
1 Egg
1/3 cup Ground Pistachios
1/3 cup chopped Nuts and Seeds (I used Almonds, Pistachios, Pumpkin Seeds, and Sunflower Seeds)
1/2 cup Jabberwocky Smooth Jerk
1/2 cup Tomatoe Sauce
Coconut Oil or Olive Oil

Mix first 4 ingredients together. Heat oil in skillet. Roll into small meatballs, about 1 1/2 inches.  Brown meat on all sides. Preheat oven to 350. Mix Jerk sauce and Tomatoe sauce together.  Place browned meatballs into baking dish. Pour sauce into baking dish and bake for approximately 15 minutes!

1. Canned Tomatoes
The expert: Fredrick vom Saal, PhD, an endocrinologist at the University of Missouri who studies bisphenol-A
The problem: The resin linings of tin cans contain bisphenol-A, a synthetic estrogen that has been linked to ailments ranging from reproductive problems to heart disease, diabetes, and obesity. Unfortunately, acidity (a prominent characteristic of tomatoes) causes BPA to leach into your food. Studies show that the BPA in most people's body exceeds the amount that suppresses sperm production or causes chromosomal damage to the eggs of animals. "You can get 50 mcg of BPA per liter out of a tomato can, and that's a level that is going to impact people, particularly the young," says vom Saal. "I won't go near canned tomatoes."


The solution: Choose tomatoes in glass bottles (which do not need resin linings), such as the brands Bionaturae and Coluccio. You can also get several types in Tetra Pak boxes, like Trader Joe's and Pomi.

Jabberwocky Jerked Gazpacho

Jerked Gazpacho, with Shrimp

Makes 6 to 8 servings

6 large ripe tomatoes (about 2 pounds)
1 large cucumber, peeled, seeded, diced (about 1 1/2 cups)
1 green bell pepper, chopped
1 red onion, chopped
2 cups Clamato juice
1/3 cup Jabbewocky Smooth Jerk Sauce
2 tablespoons chopped fresh basil and or cilantro
8 ounces cooked shrimp
1 avocado sliced (served on top as garnish)

Halve tomatoes crosswise. Working over small bowl, squeeze gently to extract seeds. Discard seeds. Transfer tomatoes to processor. Blend until coarsely pureed. Transfer tomatoes to large bowl. Stir in all remaining ingredients.  Chill until cold, about 2 hours. (Can be made 1 day ahead. Cover and keep refrigerated.) Serve cold.

I also serve with Lime and Cilantro Creme Fraise.
6 oz. creme fraise
3 Tbl. fresh lime juice
1 teas. Blonde Coconut sugar
1 Tbl. Chopped cilantro
Salt and pepper to taste.

Put in squeeze bottle and use on top of gazpacho.
Also great on fish tacos!

Jabberwocky Jerked Tapenade

I usually will serve this with a cheese platter. Also fabulous on sandwich!
Oh I so love food!

Jerked Tapenade

1  15 oz. can pitted green olives, rinsed well and drained
1  15 oz can pitted  black olives, rinsed well and drained
3 1/2 Tbl  Jabberwocky Smooth Jerk sauce
2 Tbl fresh lime juice
3 Tbl extra virgin olive oil
Lime wedges for garnish

Add first 4 ingredients to food processor. Pulse until coursely blended. Refrigerate until ready to serve. Drizzle with olive oil, garnish with lime wedges. Serve with sliced baguettes.
