Jerked Frittata


Ingredients

5 slices bacon
12 eggs
6 egg whites
1/4 cup Jabberwocky Smooth Jerk
1 1/2  tablespoons Olive oil
1 teaspoon salt
1/2 teaspoon ground black pepper
3/4 cup chopped purple onion
1 cup shredded cheddar cheese
1 cup chopped artichoke hearts
1 pint cherry tomatoes
1 avocado sliced

Directions

Preheat oven to 350 degrees F (175 degrees C).
Slice cherry tomatoes in half add Jabberwocky Smooth Jerk in a bowl
Add olive oil to large oven safe skillet. When hot add onions. When onions have become translucent,  place bacon in skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Add red pepper and artichoke hearts to skillet.
Beat eggs and add the egg whites, salt, and ground pepper in a bowl; pour into skillet. 
Bake in preheated oven until a knife inserted near the center comes out clean, 25 to 30 minutes. When finished, loosen frittata from skillet, turn over onto platter. Sprinkle Cheddar cheese on top while hot. Add cherry tomatoes and avocado to the top.
