Jabberwocky Jerked Ceviche!

After trying this Ceviche,, you may never go back to the traditional way of eating Ceviche again!

Jabberwocky Jerked Ceviche

Ingredients

2 lbs shrimp (cleaned and deveined)
2 fire roasted red pepper in thin strips
1 medium red onion chopped

2 medium tomatoes
1-cup lemon juice
1 cup orange mango juice.
3/4 cups Jabberwocky Smooth Jerk Sauce
¼ cup of your favorite BBQ sauce 
Bunch of cilantro
Fresh ground black pepper
2 tbls Olive Oil
1/4 cup roasted unsalted Peanuts

Roast Red Bell Pepper peel and slice into strips.
Boil water add the shrimp for 20 seconds until they are color pink.
Remove the shrimp and shock them in a cold water and ice cube bath.
Drain the water and place shrimp in a large bowl and add onion, pepper, tomato, pepper, orange mango juice, lemon juice, pepper, peanuts, olive oil, Jerk sauce, BBQ sauce and cilantro.

So Good!
