Roasted Jerk Cauliflower

1 large head cauliflower, broken into florets
1 Lg red onion, peeled & quartered
1 1/4 cups Jabberewocky Smooth Jerk

Preheat oven at 425.
Spread cauliflower and onions in one layer on a baking sheet. Pour Jerk sauce over the cauliflower. Roast for about 30 minutes.

Can be served hot or at room temperature.
Even if you think you don't like cauliflower, you'll be surprised!  Eat your veggies!
