Orange Melted Leeks

Orange Melted Leeks 4 leeks, split in half, washed well. Sliced 3 large Shallots sliced thin salt & freshly ground black pepper 2 tablespoons Blood Orange olive oil 1 tablespoon butter Zest of orange 3 tablespoons water Directions: Heat Olive Oil in sauté pan on low heat. Add butter and swirl pan to blend. Add shallots and cook until translucent. Add leeks and stir in oil and butter. Add 1 tablespoon of water and cover pan. Cook for 20 minutes, checking to make sure it doesn't get to dry. If needed add another tablespoon of water. Add orange zest and salt and pepper. Cook another 5-10 minutes and serve. Enjoy!
