Foo Foo
If you love plantains, you will love this dish!
8 Ripe Plantains.
1/2 stick of Butter.
3-4 Teabags or loose tea. (optional)
Salt and Pepper to taste.
Peel and Slice plantains, cover with water add tea either in bags or tied in cheesecloth. choose a tea that you love the flavor of. It will infuse into the plantains, Rooibos will give a nice smoky flavor excellent with BBQ or Jamaican dishes! Any tea you love will work.
Drain, mash, add half of the butter, salt, and pepper. Allow to cool. On a large sheet of Plastic wrap. Roll mashed plantains into approximately 2 inch cylinder shape and refrigerate. When chilled cut into 1/4-1/2 inch discs. Heat frying pan with butter, add the discs and brown on both sides! Salt and Pepper! You can prepare the cylinder a day or two ahead. I will tell you if I am boiling anything I will add a tea ball to the water. It's great with potatoes, rice, Quinoa. Many (teas) are not actually tea at all, but are herbs. If you start using some of these teas you will open your world of flavors! Depending what you're serving, you can have a sweeter tea, savory, or smoky.I have noticed if I'm making mashed potatoes, the russet potatoes absorb more of the flavor.
